  • 1 cup instant couscous, cooked
  • Olive oil
  • 4-5 garlic cloves, minced
  • 1 teaspoon turmeric
  • Grated lemon zest
  • Chopped fresh coriander and mint
  • 1-2 tablespoons of lemon juice
  • 3 cups cabbage, shredded
  • Salt and pepper as per the taste
  • 1 cup carrot, shredded
  • ½ cup zucchini, chopped
  • 1 oil, chopped
  • 1 cup tomato paste

Method

  1. In a pan, sauté all of the vegetables, including the onion and garlic.
  2. Pour in the tomato paste and cook for a few minutes.
  3. Season with salt, pepper, and turmeric to taste.
  4. Place a serving of couscous on a platter and top with the cooked stew.
  5. Serve warm.

2. Moroccan carrot, chickpea, dried fruit, and almond salad

  • 2 carrots, peeled and cut into long ribbons
  • 1 cup cooked chickpeas
  • 5-6 dried apricot, sliced and halved
  • 4 black dried figs, sliced
  • ½ cup almonds, toasted
  • Mint leaves, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1/3 cup olive oil
  • 2 teaspoon fresh lemon juice
  • Salt and pepper as per the taste

Method

  1. Heat the cumin and coriander seeds in a skillet. Now, in a blender, combine the olive oil, lemon juice, salt, and pepper. Chill the dressing until ready to use on the salad.
  2. In a large mixing basin, combine carrots, chickpeas, dried figs, almonds, salt, and pepper. Pour in the salad dressing and stir well. Serve garnished with mint leaves.

3. Harira

  • 1 onion, chopped
  • 3-4 garlic cloves
  • 1 tablespoon olive oil
  • 5-6 medium tomatoes
  • Coriander leaves, chopped
  • 1 cup tomato paste
  • Salt and pepper as per the taste
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • ½ cup garbanzo beans, cooked
  • ¼ cup brown lentils, cooked
  • ½ cup vermicelli, cooked
  • 3 tablespoon cornstarch
  • Water as required

Method

  1. Heat the olive oil in a vessel.  Now, sauté the onion and garlic thoroughly.
    Season with salt, pepper, paprika, and turmeric, and pour over the tomato puree.
  2. Bring the ingredients to a boil.
  3. Cook until the lentils and garbanzo beans are cooked. When the sauce has thickened, add both brown lentils and vermicelli.
  4. Now, in a separate bowl, whisk together corn starch and water and add them to the cooked soup.
  5. Bring to a boil and serve immediately.
