Lemon Rosemary Coconut Oil Roasted Vegetables
Ingredients:
- 2 cups trimmed carrots
- 1 cup Brussels sprouts, halved
- 1 cup green beans, trimmed
- 1 cup broccoli florets
- About 4 tbsp coconut oil, divided; melted or softened
- 2 tbsp fresh rosemary, chopped
- Juice half a lemon
- Salt and pepper to taste

Method:
Preheat the oven to 350°F and line a baking sheet with a Silpat nonstick baking mat, parchment paper, or cooking spray.
Put veggies on a tray (choice of vegetables is mix-and-match and amounts approximate; use what you have on hand or prefer).
Drizzle 2 tbsp melted coconut oil over the vegetables, or if solid, sprinkle small pea-sized pieces haphazardly over the vegetables and stir to coat.

- 1 tsp dried basil, oregano, and garlic powder
- 1-pound red potatoes (quartered)
- 2 medium yellow squash or zucchini (sliced)
- 2 cans of fire-roasted tomatoes
- 1 ounce can of tomato sauce
- 5 cups veggie stock
- 1 ounce can of white beans (rinsed and drained)
- 3 cups kale (or other sturdy green/chopped)

- Olive oil for pan searing
- 1 no. Tomato
- 1 no. cucumber
- Mayonnaise for spread
- Lettuce

Then pan sear in olive oil on both sides. Cook well.
Serve with lemon wedges.
